I have a drill press, angle grinder and DC welder to try and do this, and my welding sucks. Another big obstacle is I don't have scrap, will need to buy the steel in anything from 2m to 6m lengths.

Mike, I haven't built a grinder in a lot of years now. I bought a burr king over a decade ago and that's that. I do have other belt grinders but seldom ever use anything else. My Blade Master grinder is now a surface grinder. If I made one today, I doubt it would look as good as yours.
For a decent 2" x 72" belt grinder, we're looking for ideally 1 to 3 horsepower, with a preference for 1.5 to 3 horsepower. The motor needs to have enough power to perform efficient knife grinding and general metal shaping tasks.
